Beverages formulated with whey protein and added lutein Ciência Rural

ABSTRACT: This study aimed to develop and characterize beverages formulated with whey protein and added lutein. Beverages formulated with 0.5 (F1), 2.0 (F2), 4.0 (F3) and 6.0% w/v (F4) whey protein were physicochemically and microbiologically characterized, and sensory evaluated. The physicochemical analyses indicated that the protein content significantly changed (P<0.05) the acidity values, soluble solids and the colorimetric coordinates, making possible to adjust mathematical models for all these variables. Microbiological analyses showed no significant contamination (P<0.05) during processing that would compromise drinks quality of the drinks. Carotenoids profile and total polyphenols in fruits of Pereskia aculeata Miller Rev. Bras. Frutic.

Pereskia aculeata Mill. (Ora-pro-nóbis) is a native cactaceae from tropical America, whose leaves have high protein content. In Brazil it is found in all territorial extension between the states of Bahia and Rio Grande do Sul. Most studies have focused on chemical characterization of the leaves of this specie. The objective was to assess the carotenoids profile and the total polyphenols present in the fruits of P. aculeate. Carotenoids were determined by HPLC-PAD (high performance liquid chromatography - photodiode array detector), total polyphenols were determined by Folin-Ciocalteu and vanillin methods. Nephroselmis sp. was previously identified as a species of interest for its antioxidant properties owing to its high carotenoid content. In addition, nitrogen availability can impact biomass and specific metabolites’ production of microalgae. The seasonal variation in energy quenching parameters of photosystem II and photoprotective pigments were studied in seedlings and adults of two Proteaceae: a shade-intolerant species (Embotrium coccineum J.R. et G. Forster) and a shade-tolerant species (Lomatia ferruginea (Cav.) R. Br.). We postúlate that the shade intolerant species favors photochemical energy driven processes (mainly C0(2) assimilation) while the shade tolerant species exhibits higher non-photochemical energy dissipation under unfavorable conditions. Moreover, the shade tolerant species presents lower seasonal variations in these parameters that the shade intolerant species. Abstract Dietary supplements in many countries such as the USA do not require registration prior to commercialization. The Agência Nacional de Vigilância Sanitária (ANVISA) registers substances with functional properties as foods. Lutein is a carotenoid with antioxidant activity available on the market. However, no regulatory mandates exist to govern the design of quality control tests, which are necessary to ensure formulation effectiveness.
